These delicious Blueberry Coconut Energy Balls are packed with nutrients and healthy fat to keep you satisfied.
Snack time sometimes needs a remake in our house. We can get in such a rut and eventually, certain young members of Team Braddock revolt against the typically healthy options.
To help with this, I created these Blueberry Coconut Energy Balls.

I really love a snack with healthy fats in them, especially in the morning. I just need the satiating fat to tide me over and help control my appetite all day. Plus, my boys need it too or they are hungry in 30 minutes. These snack Blueberry Coconut Energy balls have unsweetened coconut flakes and almond butter to nip hunger in the bud.
I also love that that these Blueberry Coconut Energy Balls include fruit in them in the form of dried blueberries. Have you ever tried dried blueberries? If not, you really need to. They are incredibly delicious and full of great nutrition. I always have some in my pantry. They are great when you're craving a sweet treat.
Feel Good Ingredients
There are only a handful of simple ingredients needed to make this perfect snack:
- Dried blueberries -Being high in antioxidants makes them a great addition to this delicious snack.
- Pitted dried Medjool dates
- Almonds
- Unsweetened coconut
- Hemp seeds (optional) - These are a good source of protein and fiber.
- Almond butter (this brand contains 6 grams of protein in 2 tablespoons)
- Cinnamon

Instructions
- Combine all ingredients in a food processor and pulse until ingredients all come together in a mound (about 2 minutes).
- Roll dough into ping pong size balls. Refrigerate until ready to eat.

- ยพ cup dried blueberries
- ยพ cup pitted dried dates
- 1 cup almonds
- ยฝ cup unsweetened coconut
- ยผ cup hemp seeds (optional)
- ยฝ cup almond butter
- ยฝ teaspoon cinnamon
Instructions
- Combine all ingredients in a food processor and pulse until ingredients all come together in mound (about 2 minutes).
- Roll dough into ping pong size balls. Refrigerate until ready to eat.

Storage
Store these energy balls in an airtight container in the fridge and take 1-2 with you on the go during the day. This quick snack is delicious, satisfying and will give you an energy boost to power you through the next few hours of your day.
Equipment
You do need a strong food processor to make this simple snack. If you don't own one, I highly recommend a Cuisinart, like this one. I've had this model for over a decade and it still works great.
Substitutions
You could substitute ยฝ cup peanut butter or your favorite nut butter for the almond butter. This will change the flavor, but should still be delicious.
