When it comes to watching football, I wish I could tell you that I have the super-healthy-but-everyone-loves-it food spread down to a science, but I don't. See, Coach is pretty particular about what qualifies as "football food", and it does NOT involve spinach, quinoa, or a fruit salad.

This Mango Cheddar Pork Crostini is an easy, delicious appetizer that's on the lighter side. But don't worry, no one will notice because they taste so good.

When I offer up one of my healthed-up options as an idea for game day, I get the look of don't mess with my football food, woman. Can anyone relate?

I've learned a few smart swaps along the way that have been touchdowns like my Grilled Fruit & Vegetable Kabobs, Mojo Pulled Pork and White Chocolate Dipped Pretzel Rods. But I'm still working to find healthier options for game day spreads.

One night this fall I wasn't feeling like cooking and I happened to have pulled pork (from this recipe), a whole wheat baguette, mangos and Cabot cheddar laying around. As the saying goes, necessity is the mother of invention and I created this simple, delicious and lightened up appetizer. (Confession: we actually ate it for dinner that night.)

I've been saving this Mango Cheddar Pork Crostini for months to reveal it right before the Super Bowl because it's a lighter appetizer with HUGE flavor. I assure you, no one will be whispering about the person who brought the healthy food. In fact, this recipe is most definitely:

Seriously, it makes a great dinner too especially if you made or bought pulled pork earlier in the week. Use my Mojo Pulled Pork recipe or this one from 100 Days of Real Food for the pork. You can probably find precooked pulled pork from the deli section at the supermarket.

I hope you will give this simple Mango Cheddar Pork Crostini a try this Superbowl or anytime you need a lighter appetizer.

Description

This Mango Cheddar Pork Crostini is an easy, delicious appetizer that's on the lighter side. But don't worry, no one will notice.


Ingredients

Units Scale
  • 1 whole grain French baton or baguette (sliced in thin rounds)
  • 1 ½ cups pulled pork
  • ½ fresh mango (finely diced)
  • 1 cup shredded Cabot Farmhouse Reserve cheddar cheese

Instructions

  1. Preheat broiler.
  2. Line baking sheet with parchment paper then lay the bread rounds down flat.
  3. Scoop 1 tablespoon of pulled pork on each bread round. Then layer 1 teaspoon of fresh mango and a pinch of cheddar cheese on top.
  4. Place under broiler for 2-3 minutes until cheese is melted and bread is toasted. Watch carefully to prevent burning. Serve immediately.
