Skip whatever crazy cottage cheese recipe you found on tiktok- make this simple recipe instead! I am always on the hunt for easy, filling, healthy but delicious snacks. I don't mind eating simple finger foods with my kids, but every once in a while, I like to whip up a snack that makes me feel like a woman. An adult woman.

I was challenged to come up with a recipe that incorporates a smoky flavor profile. This got me pretty excited because one summer on our trip to Charleston, I discovered this amazing smoked sea salt from Botany Bay Sea Salt and I'm always looking for new ways to use it.

Ingredients

You'll only need 4 ingredients to make this cottage cheese and tomatoes recipe:

  • Tomato
  • Smoked Sea Salt
  • Low Fat Cottage Cheese
  • Herbs de Provence

Unfortunately, you can only buy this treasure at the Charleston Farmers Market, making this ingredient all the more special. (So if you are ever driving through this area - STOP - TURN AROUND - MAKE A U-EY- WHATEVER IT TAKES - and visit this farmers market.) Fortunately, smoked sea salt is pretty widely available. I've added some smoked sea salts to my A-Store for your shopping pleasure, which you can access by clicking HERE. I highly recommend a coarse ground smoked sea salt because you will taste it more easily.

Instructions

  1. Arrange sliced fresh tomatoes in a single layer on a plate (as many or as few as you like).
  2. Sprinkle with smoked sea salt.
  3. Scoop cottage cheese on top of each tomato.
  4. Sprinkle with Herbs de Provence

What also led to this stellar snack idea was finding this amazing tub of Daisy Cottage Cheese at Costco for a really great price. Cottage cheese is an incredible Make Healthy Easy food because it's a convenient and good source of protein that I personally think is really delicious.

I mix cottage cheese with lots of different fruits and fresh vegetables but never quite like this before. Adding smoked sea salt and also a pinch of Herbs de Provence up the wow-factor on the flavor of this snack taking it from boring to A-Mazin! It was such a killer combo that I almost poured myself a glass of wine to go with it (at 3pm) because I felt like such a grown up. (Moms of small children, you know what I'm talking about here.)

So put these ingredients on your shopping list this week and whip yourself up a sophisticated tasty, but easy to assemble snack, perfect for home or the office.
