Sometimes, the most simple of recipes are THE BEST! You know they are reliable, quick and tasty. I mean, what more could you want?!

Cooking is something I really enjoy doing and I find it relaxing. I don't mind a complicated recipe, especially if it's really worth it in the end. However, with the stages of my boys (one and three), long gone are the days of leisurely cooking dinner.

Nowadays, it's much more chaotic in my kitchen --

I chop food while also trying to not chop off fingers that are grabbing for a taste or for me. 

I am responding to the cry of "Mommy, look at me!" or just plain ole crying every 2-3 minutes. 

I am easily distracted from reading my recipe to answer one of life's greatest questions like "what are you doing mommy?"

At the end of a long day of working or mothering (or a combo of the two), I usually am running pretty low on cooking motivation. But since it's SO important to me that we eat at home most of the time, I like having some quick recipes that are SUREFIRE wins for all of Team Braddock.

These easy, 6 Ingredient Meatballs are just that! They are made with lean ground beef, a food I find incredibly nutritious and certainly delicious.

I usually add them to my Simple and Sweet Marinara sauce that I keep in the freezer, but they are also perfect served alongside roasted veggies or my Slow Cooker Rosemary Acorn Squash. They could be a great appetizer served with a delicious dip or fancy ketchup.

I recommend doubling this recipe to make a big batch and freeze the extras once they cool down. That way, you just have to reheat for a quick dinner. Score!!

Description

Making mouth-watering, homemade meatballs is NOT a daunting task with this quick, 6 ingredient recipe and simple ingredient list. Just a few fresh add-ins turn a boring meal idea into something amazing! Add these to marinara, put on a sub, pair with roasted veggies or serve as is as an appetizer.


Ingredients

Units Scale
  • 0.8 - 1 lb lean ground beef (95% lean meat/5% fat)
  • 1 small yellow onion (grated)
  • ¼ cup fresh parsley (minced)
  • 1 egg
  • ⅓ cup dry bread crumbs
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Preheat oven to 425° F.
  2. Line a rimmed baking sheet with parchment paper.
  3. Combine all ingredients in to a mixing bowl. Using your hands, gently combine ingredients until well incorporated.
  4. Form meat in to balls, 1" in diameter by gently rolling between your hands. Place on baking sheet, leaving at least 1" between each one.
  5. Bake for 12 minutes. Remove from oven and serve or add to marinara.

Notes

You can add cooked meatballs to a marinara sauce and let simmer in the sauce for an extended period of time.
1 tablespoon of dried parsley can be substituted for the fresh parsley. Rub dried parsley between your fingers as you add it to the raw meat to help activate the flavor.
