Ingredients
Strawberry Goat Cheese Toast:
1 slice whole grain, high fiber bread
1 ounce goat cheese
8 small strawberries, chopped
10 shelled pistachios (or nut of choice)
Almond Butter Strawberry Toast:
1 slice whole grain, high fiber bread
2 tablespoons almond butter
sliced strawberries
sprinkle of cocoa powder
Avocado Balsamic Strawberry Toast:
1 slice whole grain, high fiber bread
1/4 of an avocado
2 tablespoons goat cheese, crumbled
halved strawberries
drizzle of balsamic vinegar
White Bean and Pepper Hummus Toast:
1 slice whole grain, high fiber bread
1/2 cup white beans, drained and rinsed
1 teaspoon extra virgin olive oil
pinch of pepper
hummus
sliced strawberries
fresh basil, chopped
Instructions
Strawberry Goat Cheese Toast:
Toast bread. Mix together goat cheese and strawberries to create a spread. Spread on warm toast and top with pistachios or nut of choice.
Almond Butter Strawberry Toast:
Toast bread. Spread almond butter on the toast. Layer sliced strawberries on top. Sprinkle with cocoa powder.
Avocado Balsamic Strawberry Toast:
Toast bread. In a small bowl, mash up avocado with a fork, then spread it on the toast. Sprinkle with goat cheese. Layer strawberries on top. Drizzle with balsamic vinegar.
White Bean & Pepper Hummus Toast:
Toast bread. Meanwhile, in a small bowl, combine white beans, extra virgin olive oil, and a pinch of pepper (or more to taste) and mash with a fork. Spread hummus on toast and layer strawberries on top. Top with chopped, fresh basil.
