Description

This easy and quick instant pot tomato soup is perfect for a weeknight dinner or rainy night. It's made with a short list of ingredients but packs a punch of flavor thanks to a couple of secret ingredients.

Ingredients

Units Scale
  • 1 tablespoon extra virgin olive oil
  • 1 cup diced onion (any white or yellow), from 1 medium onion
  • 3 garlic cloves, minced
  • 3 cans diced tomatoes*
  • 1 whole tomato or 2 Roma tomatoes, diced
  • 24 oz vegetable stock or broth ( 1 carton)
  • 1 cup loosely packed fresh basil leaves, roughly chopped (can substitute 2 tablespoons dried basil)
  • 1/2 teaspoon Kosher Salt
  • Balsamic vinegar for garnish (optional)

Instructions

  1. Press the saute function button on the Instant Pot and allow to heat up. When hot, add the oil and onions. Cook, stirring frequently for 3-4 minutes, until onions start to soften. Add the garlic and cook for 1 more minute, until fragrant.
  2. Press "cancel" to turn off the saute function. Add canned tomatoes (with juice), fresh tomato, stock, basil leaves and salt. Stir to combine.
  3. Close the lid and ensure the release knob is set at "sealing". Choose the "manual" cook function and set the timer for 15 minutes.
  4. When time is up you can choose to allow a natural release (if you have time) or a quick release. Remove the lid and let the steam come out safely. Turn off the Instant Pot if you are serving right away.
  5. Submerge an immersion blender in the soup mixture and blend until smooth. Alternatively, carefully ladle soup into a blender and safely blend in batches until smooth (see this article for helpful safety tips). If you want a chunky soup, skip blending all together.
  6. Ladle pureed soup into bowls and drizzle with a teaspoon of your favorite balsamic vinegar. Serve with a gooey grilled cheese.

Notes

* Recommend using at least one can of fire roasted diced tomatoes to boost the flavor.

Drizzling balsamic vinegar on top of soup adds an incredible bright pop of flavor. Give it a try and see if you love it too.
