
This month The Recipe Redux, a large food blogger community that monthly posts healthy recipes around a theme, turns 5 years old. I joined this stellar group just a few months after its inception and have been reduxing for nearly that whole 5 years. It's a little hard to believe it.
This group has played a very important role in my blogging career. I have learned so much about blogging, recipe development, photography and business from them. It's safe to say that I would not be anywhere close to where I am now with MHE without The Redux.
Beyond just skills, I have gained some tremendous friends and colleagues from The Recipe Redux. In fact, some of them have become very dear friends that I talk to regularly. Since this month our theme is to share a fellow Reduxers' (that's what we call ourselves) recipe, I am going to introduce you to one of my blogging friends today.
Meet Kara Lydon, The Foodie Dietitian.
Kara and I met at a blogging retreat that was loosely related Recipe Redux. We quickly became friends and then shortly thereafter formed a mastermind group with 2 other dietitians. We have been good friends now for almost 3 years.
Kara is an amazing recipe developer and photographer focused on a pescatarian. {PLEASE check out all her beautiful recipes.} She is also a certified yoga instructor and just published her first e-book called Nourish your Namaste which is a must-have guide for any level yogi looking to make connections between yoga, health and nutrition. I attended one of her yoga classes in Boston back in March (thus the picture above) and I've been craving another class ever since. She is a magical teacher.
I really could go on and on about my girl Kara. She is just a beautiful person and I'm blessed to have her as a friend. But let me get back to her delish food.
Today, I would like to share one recipe in particular from Kara, her Zucchini Black Bean Tacos with Avocado Crema.
I know, they look delicious, right! Anyone who's anyone (massive generalization there) has made some version of a vegetarian taco but this recipe helps you take it way up to the peak of tastiness. Kara is so good at creative approaches to everyday food.
